Avocados are one of life's wonders, not only are they delicious they are also extremely nutritious!

These shiny on the outside, creamy on the inside ovals of goodness carry many health benefits including being packed with vitamins, antioxidants and fatty acids that are really good for you. You can even use the fruit to make a homemade face mask.

If you are like me and would like to eat avocado with every meal, here are few 'think outside the box' ideas to get you started...

Sushi

Get creative! You can try all kinds of variations of these bitesize works of art, prawn, chicken our just avocado on its own is also delicious. While the rolling might take a few attempts to master, the results are definitely worth it, and in the mean time the offcuts are just as tasty!

All you need to make them is fresh salmon, sushi rice, nori (thin sheets of seaweed), cream cheese and avocado. They are perfect to serve up to impress friends and family.

Salad

Lets be real for a second, salad is not the most exciting dish on the planet but it doesn't have to be completely boring!

This salad might change your views on leafy greens and even have you craving them. In a bowl toss rocket and salad leaves with sliced cherry tomatoes and avocado, salt, pepper, and a little olive oil. Top your bowl of yumminess with a sprinkle of feta cheese and some flavourful olives and Voilà a deliciously light and healthy meal.

Savoury Pancakes

Normally I am a lemon and sugar girl myself but these texture-full savoury options are a game changer.

Cover homemade savoury pancakes with fresh tomato, sliced avocado, sweet corn and a sprinkle of mixed herbs and salt and pepper. I also like to add drizzled of balsamic vinegar to really bring this dish to life.

Classic Guacamole

Now, don't limit this glorious Mexican invention to just a dip. While it is the perfect accompaniment to nachos it is also great in loads of other Mexican dishes; fill your fajitas, burritos and tacos with this guac. Mash up your avocado and add finely chopped tomatoes, red onion, salt, freshly chopped coriander and a big squeeze of lemon juice to keep it fresh. You can even add a few chilli flakes if you want to give your guac a little extra kick.

Poached Egg On Toast

Combing a freshly poached egg on toast with crushed avocado for a truly scrumptious and healthy way to start the morning.

While you egg delicately poaches in a pan, roughly mash your avocado and add seasoning. Smooth your avocado over freshly toasted brown bread and when your egg is perfectly cooked, add it to your pièce de résistance, sparkle with black pepper and enjoy!
